Ingredients

Carrots
1 pound, peeled and chopped
Water
4 cups
Granulated sugar
1/4 cup (adjust to taste)
Freshly squeezed lemon juice
2 tablespoons
Rose water
1 tablespoon
Ice cubes
as needed for serving

Instructions

  1. Start by peeling and chopping the carrots into small pieces to facilitate blending.
  2. In a blender, combine the chopped carrots and 4 cups of water. Blend on high until the mixture is smooth and creamy, about 1-2 minutes.
  3. Strain the carrot mixture through a fine mesh sieve or cheesecloth into a large bowl. Use a spoon or spatula to press down on the solids to extract as much juice as possible.
  4. Add 1/4 cup of granulated sugar to the freshly strained carrot juice and stir until it is completely dissolved. Taste and adjust the sweetness according to your preference.
  5. Mix in 2 tablespoons of freshly squeezed lemon juice and 1 tablespoon of rose water. Stir well to combine all the flavors for that perfect balance.
  6. Transfer the juice to a pitcher and chill in the refrigerator for at least 2 hours to allow the flavors to meld beautifully.
  7. When ready to serve, fill glasses with ice cubes and pour the Aab-e Havij over them. Stir gently and enjoy the refreshing taste!
