Aab-e Sekanjabin is a delightful and refreshing traditional Iranian syrup, known for its unique combination of sweet and tangy flavors. Made from the finest honey and white vinegar, this syrup is a perfect thirst-quencher during hot summer days. Served over ice with crisp cucumber slices and fragrant mint, it transforms into a rejuvenating drink that is both invigorating and satisfying. This ancient beverage has been enjoyed for centuries, often associated with Persian picnics and gatherings, making it a cherished part of Iranian culinary heritage.

Ingredients

Water
4 cups
Sugar
1 cup
White vinegar
1 cup
Fresh mint leaves
1 cup, packed
Cucumber
1, thinly sliced
Ice cubes
as needed

Instructions

  1. In a medium-sized pot, combine the water and sugar. Bring to a boil over medium heat, stirring constantly until the sugar is completely dissolved.
  2. Once the sugar has dissolved, reduce the heat to low and carefully add the white vinegar. Let the mixture simmer for about 30 minutes, allowing the flavors to meld together.
  3. After 30 minutes, add the fresh mint leaves to the pot and continue to simmer for an additional 30 minutes. This will infuse the syrup with the refreshing essence of mint.
  4. Remove the pot from the heat and strain the syrup through a fine mesh sieve or cheesecloth into a clean container, discarding the mint leaves. Allow the syrup to cool to room temperature.
  5. To serve, fill a glass with ice cubes, add a few slices of cucumber, and pour in a couple of tablespoons of the cooled syrup. Fill the rest of the glass with cold water and stir well before enjoying.
