Aebleskiver

Ingredients
- 2 cups All-purpose flour
- 1/4 cup Granulated sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 2, separated Egg
- 1 1/2 cups Buttermilk
- 4 tablespoons, melted Unsalted butter
- 1 teaspoon Vanilla extract
- for dusting Powdered sugar
- for serving Jam

Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk the egg yolks, buttermilk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are perfectly fine.
- In another bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter until fully incorporated.
- Preheat an Aebleskiver pan over medium heat and lightly grease each well with butter or cooking spray to prevent sticking.
- Fill each well with batter, filling it about 3/4 full. Allow space for the batter to expand as it cooks.
- Cook for 2-3 minutes, or until the edges start to set and become golden brown. Using a skewer or fork, carefully flip each Aebleskiver over, cooking for an additional 2-3 minutes until they are cooked through and golden brown on all sides.
- Transfer the cooked Aebleskiver to a plate and repeat with the remaining batter.
- Serve the Aebleskiver warm, dusted with powdered sugar and accompanied by jam for dipping. Enjoy these delightful treats fresh off the pan!
