Aguachile

Aguachile is a vibrant and refreshing Mexican dish that beautifully showcases the flavors of the sea. Originating from the coastal regions of Mexico, particularly Sinaloa, this dish features succulent shrimp marinated in a zesty blend of lime juice, spicy jalapeños, and fragrant fresh cilantro. The bright green marinade creates a tantalizing contrast with crisp cucumber and sharp red onion, making it a perfect appetizer or light meal. Each bite captures the essence of summer, providing a burst of flavor that is both invigorating and satisfying. Serve it chilled with crunchy tortilla chips for a delightful crunch and a taste of the beach.

Serves 4

Ingredients

Shrimp
1 pound, peeled and deveined
Cucumber
1 large, thinly sliced
Red onion
1 small, thinly sliced
Cilantro
1/2 cup, chopped
Lime juice
1/2 cup, freshly squeezed
Jalapeño
1, seeded and chopped
Salt
1 teaspoon, or to taste
Avocado
1, diced (optional for garnish)
Tortilla chips
for serving

Instructions

  1. In a blender, combine the chopped cilantro, freshly squeezed lime juice, jalapeño, and salt. Blend until smooth to create a bright green marinade.
  2. In a large mixing bowl, combine the peeled and deveined shrimp, sliced cucumber, and thinly sliced red onion.
  3. Pour the cilantro-lime marinade over the shrimp and vegetables. Gently stir to ensure that everything is well coated in the marinade.
  4. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes, allowing the shrimp to 'cook' in the acidity of the lime juice. For optimal flavor, marinate for up to 1 hour.
  5. Before serving, gently stir the aguachile again and taste to adjust seasoning if needed. Serve chilled, garnished with diced avocado and additional cilantro if desired, alongside crunchy tortilla chips for dipping.

Tips

  • 💡 For a spicier kick, leave some seeds in the jalapeño or add more jalapeños to taste.
  • 💡 You can substitute shrimp with scallops or fish, like tilapia, for a different take on this dish.
  • 💡 Add mango or pineapple cubes for a sweet contrast to the spice and acidity.
