Servings: 4
Ingredients
- Ground beef (1 pound)
- Onion (1, diced)
- Garlic (2 cloves, minced)
- Taco seasoning (1 packet (or homemade))
- Salt (to taste)
- Pepper (to taste)
- Flour tortillas (4 large)
- Refried beans (1 cup)
- Shredded cheese (1 cup (cheddar or mexican blend))
- Cooking spray (for air frying)
- Sour cream (for serving)
- Salsa (for serving)
- Guacamole (for serving)
- Cilantro (for garnish)
Instructions
- In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and cooked through, about 5-7 minutes. Drain any excess grease.
- Add the taco seasoning, salt, and pepper to the skillet, stirring to combine well. Cook for an additional 2 minutes to allow the flavors to meld.
- Warm the flour tortillas in the microwave for about 10-15 seconds to make them more pliable.
- Spread a spoonful of refried beans onto each tortilla, leaving a border around the edges.
- Spoon a generous amount of the ground beef mixture over the beans, then sprinkle with shredded cheese.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Ensure the seam is tucked in well.
- Preheat the air fryer to 400°F (200°C).
- Lightly spray the air fryer basket with cooking spray. Place the chimichangas seam side down in the basket, ensuring they are not touching each other.
- Cook for 10 minutes, then carefully flip the chimichangas and cook for an additional 5-7 minutes, or until they are golden brown and crispy.
- Remove from the air fryer and let cool slightly before serving. Serve hot with sour cream, salsa, guacamole, and a sprinkle of fresh cilantro.
