  • Flour tortillas (4 large)
  • Refried beans (1 cup)
  • Shredded cheese (1 cup (cheddar or mexican blend))
  • Cooking spray (for air frying)
  • Sour cream (for serving)
  • Salsa (for serving)
  • Guacamole (for serving)
  • Cilantro (for garnish)

Instructions

  1. In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and cooked through, about 5-7 minutes. Drain any excess grease.
  2. Add the taco seasoning, salt, and pepper to the skillet, stirring to combine well. Cook for an additional 2 minutes to allow the flavors to meld.
  3. Warm the flour tortillas in the microwave for about 10-15 seconds to make them more pliable.
  4. Spread a spoonful of refried beans onto each tortilla, leaving a border around the edges.
  5. Spoon a generous amount of the ground beef mixture over the beans, then sprinkle with shredded cheese.
  6. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Ensure the seam is tucked in well.
  7. Preheat the air fryer to 400°F (200°C).
  8. Lightly spray the air fryer basket with cooking spray. Place the chimichangas seam side down in the basket, ensuring they are not touching each other.
  9. Cook for 10 minutes, then carefully flip the chimichangas and cook for an additional 5-7 minutes, or until they are golden brown and crispy.
