Instructions
- In a large bowl, gently combine the lump crab meat, panko breadcrumbs, beaten egg, mayonnaise, Dijon mustard, Old Bay seasoning, lemon juice, salt, and pepper. Be careful not to break up the crab meat too much.
- Using your hands, form the mixture into 8 equal patties, about 3 inches in diameter.
- Brush both sides of each crab cake with olive oil to ensure a crispy texture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Place the crab cakes in a single layer in the air fryer basket, making sure not to overcrowd. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with a side of lemon wedges and your favorite dipping sauce, such as a tangy tartar sauce or a spicy remoulade.
Tips
- For added flavor, consider mixing in chopped fresh herbs such as parsley or dill.
- You can also substitute the lump crab meat with canned crab meat, but ensure to drain it well to avoid excess moisture.
