Ingredients

Chickpeas
1 can (15 oz), drained and rinsed
Onion
1 small, roughly chopped
Garlic
2 cloves, minced
Fresh parsley
1/4 cup, chopped
Fresh cilantro
1/4 cup, chopped
Ground cumin
1 teaspoon
Ground coriander
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Baking powder
1 teaspoon
Bread crumbs
1/2 cup
Olive oil
2 tablespoons (for brushing)
Tahini sauce
1/2 cup (for serving)
Pita bread
4 pieces (for serving)
Lettuce, tomatoes, cucumbers
as desired (for topping)

Instructions

  1. In a food processor, combine the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and baking powder. Pulse until the mixture is well combined but still slightly chunky, about 10-15 pulses.
  2. Transfer the falafel mixture to a bowl and stir in the bread crumbs. Let the mixture rest for 10 minutes to allow the bread crumbs to absorb moisture.
  3. Preheat the air fryer to 375°F (190°C) while the mixture rests.
  4. Shape the falafel mixture into small patties or balls, about 1 inch in diameter.
  5. Brush the air fryer basket with olive oil. Place the falafel patties or balls in the basket, making sure to leave space between each one to allow for even cooking.
  6. Cook the falafel in the air fryer for 10 minutes. Flip each piece over and cook for an additional 8-10 minutes, or until they are golden brown and crispy.
  7. Serve the air fryer falafel with warm pita bread, drizzled with tahini sauce, and topped with fresh lettuce, tomatoes, and cucumbers.
