Ingredients

Flour tortillas
4 large
Shredded cheese
2 cups (cheddar, monterey jack, or your favorite blend)
Cooked chicken or beef
1 cup, diced
Sliced bell peppers
1 cup (mixed colors for visual appeal)
Sliced onions
1/2 cup
Sliced jalapenos
1/4 cup (adjust to taste)
Salt
1/2 teaspoon
Black pepper
1/2 teaspoon
Salsa
1/2 cup (for serving)
Sour cream
1/2 cup (for serving)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. On a flat surface, place one tortilla and sprinkle half of the shredded cheese on one half of the tortilla.
  3. Evenly distribute the diced chicken or beef, sliced bell peppers, onions, and jalapenos on top of the cheese.
  4. Season with salt and pepper to taste.
  5. Fold the tortilla in half to cover the filling, pressing down gently to seal.
  6. Repeat with the remaining tortillas and filling ingredients.
  7. Arrange the quesadillas in the air fryer basket in a single layer. You may need to cook in batches.
  8. Cook for 5 minutes, then carefully flip the quesadillas and cook for an additional 5 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted.
  9. Remove from the air fryer and let cool for a minute before slicing into wedges.
  10. Serve hot with salsa and sour cream on the side.
