Crispy Air Fryer Quesadillas

Ingredients
- 4 large Flour tortillas
- 2 cups (cheddar, Monterey Jack, or your favorite blend) Shredded cheese
- 1 cup, diced Cooked chicken or beef
- 1 cup (mixed colors for visual appeal) Sliced bell peppers
- 1/2 cup Sliced onions
- 1/4 cup (adjust to taste) Sliced jalapenos
- 1/2 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 cup (for serving) Salsa
- 1/2 cup (for serving) Sour cream

Instructions
- Preheat the air fryer to 400°F (200°C).
- On a flat surface, place one tortilla and sprinkle half of the shredded cheese on one half of the tortilla.
- Evenly distribute the diced chicken or beef, sliced bell peppers, onions, and jalapenos on top of the cheese.
- Season with salt and pepper to taste.
- Fold the tortilla in half to cover the filling, pressing down gently to seal.
- Repeat with the remaining tortillas and filling ingredients.
- Arrange the quesadillas in the air fryer basket in a single layer. You may need to cook in batches.
- Cook for 5 minutes, then carefully flip the quesadillas and cook for an additional 5 minutes, or until the tortillas are golden brown and crispy, and the cheese is melted.
- Remove from the air fryer and let cool for a minute before slicing into wedges.
- Serve hot with salsa and sour cream on the side.
