- Cooked chicken breast (1 cup, shredded)
- Black beans (1 cup, drained and rinsed)
- Corn (1 cup, frozen or canned)
- Red bell pepper (1, diced)
- Green onions (2, chopped)
- Shredded cheddar cheese (1 cup)
- Ground cumin (1 teaspoon)
- Chili powder (1 teaspoon)
- Salt (1/2 teaspoon)
- Pepper (1/4 teaspoon)
- Egg roll wrappers (10-12)
- Cooking spray (as needed)
- Sour cream (for serving)
- Guacamole (for serving)
- Salsa (for serving)
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, chopped green onions, shredded cheddar cheese, ground cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll up tightly, sealing the edges with a bit of water to ensure they stay closed during cooking.
- Repeat the process with the remaining wrappers and filling until all are rolled.
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the egg rolls with cooking spray on all sides to achieve a crispy texture.
- Arrange the egg rolls in a single layer in the air fryer basket, making sure they do not touch to allow even cooking.
- Cook for 12-15 minutes, flipping halfway through, until the egg rolls are golden brown and crispy.
