Instructions

  1. In a clean pot, gently heat the mare's milk until it reaches a temperature of 37°C (98.6°F). Use a thermometer for accuracy.
  2. Once the milk is at the correct temperature, remove it from heat and add the yogurt starter culture. Stir the mixture thoroughly to ensure even distribution.
  3. Cover the pot tightly with a clean cloth or lid to maintain warmth and prevent contamination. Place it in a warm, draft-free area at room temperature.
  4. Allow the milk to ferment for 24 to 48 hours, depending on the desired tanginess. The longer it sits, the more pronounced the flavor will be.
  5. After fermentation, carefully transfer the Airag to the refrigerator and chill for a few hours to enhance its refreshing taste.
  6. Before serving, stir in sugar to sweeten the Airag according to your preference. Start with a tablespoon and adjust to taste.
  7. Pour the Airag into glasses and serve chilled. Enjoy the unique blend of flavors and the effervescence that comes from fermentation.
