
Ajiaco

Ingredients
- Salt (to taste)
- Black pepper (to taste)
- Sour cream (1/4 cup)
- Capers (1 tablespoon)
- Avocado (1, sliced)
- Cilantro (2 tablespoons, chopped)
- Guascas (2 tablespoons)
- Chicken broth (8 cups)
- Garlic (3 cloves, minced)
- Onion (1, chopped)
- Corn on the cob (2, halved)
- Potatoes (3, peeled and diced)
- Chicken (2 pounds, bone-in and skin-on)
Instructions
- In a large pot, bring the chicken broth to a boil over medium-high heat.
- Add the chicken pieces, chopped onion, minced garlic, and guascas to the boiling broth. Reduce the heat to medium-low, cover the pot, and let it simmer for about 30 minutes.
- After 30 minutes, remove the chicken pieces from the pot. Allow them to cool slightly, then shred the meat and discard the bones. Return the shredded chicken to the pot.
- Add the peeled and diced potatoes and the halved corn on the cob to the pot. Continue to simmer for an additional 20 minutes, or until the potatoes are tender.
- Season your Ajiaco with salt and pepper to taste.
- Ladle the soup into bowls, ensuring each gets a piece of corn. Garnish each bowl with a few slices of avocado, a sprinkle of capers, a dollop of sour cream, and a sprinkle of chopped cilantro.
