Ingredients

  • Salt (to taste)
  • Black pepper (to taste)
  • Sour cream (1/4 cup)
  • Capers (1 tablespoon)
  • Avocado (1, sliced)
  • Cilantro (2 tablespoons, chopped)
  • Guascas (2 tablespoons)
  • Chicken broth (8 cups)
  • Garlic (3 cloves, minced)
  • Onion (1, chopped)
  • Corn on the cob (2, halved)
  • Potatoes (3, peeled and diced)
  • Chicken (2 pounds, bone-in and skin-on)

Instructions

  1. In a large pot, bring the chicken broth to a boil over medium-high heat.
  2. Add the chicken pieces, chopped onion, minced garlic, and guascas to the boiling broth. Reduce the heat to medium-low, cover the pot, and let it simmer for about 30 minutes.
  3. After 30 minutes, remove the chicken pieces from the pot. Allow them to cool slightly, then shred the meat and discard the bones. Return the shredded chicken to the pot.
  4. Add the peeled and diced potatoes and the halved corn on the cob to the pot. Continue to simmer for an additional 20 minutes, or until the potatoes are tender.
  5. Season your Ajiaco with salt and pepper to taste.
  6. Ladle the soup into bowls, ensuring each gets a piece of corn. Garnish each bowl with a few slices of avocado, a sprinkle of capers, a dollop of sour cream, and a sprinkle of chopped cilantro.
