Ingredients

Pork shoulder
2 lbs, thinly sliced
Pineapple
1 cup, chopped
Onion
1 medium, chopped
Garlic
4 cloves
Achiote paste
2 tablespoons
Chipotle peppers in adobo sauce
2 peppers with 1 tablespoon sauce
Cumin
1 teaspoon
Oregano
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon

Instructions

  1. In a blender, combine the pineapple, onion, garlic, achiote paste, chipotle peppers with their sauce, cumin, oregano, salt, and black pepper. Blend until smooth to make the marinade.
  2. Place the pork slices in a large bowl, pour the marinade over them, and toss to ensure all the pork is well coated. Cover the bowl and refrigerate for at least 2 hours, or ideally overnight for the flavors to fully meld.
  3. Preheat your grill to medium-high heat. Shake off any excess marinade from the pork, then grill the slices for about 4-5 minutes per side, until they are cooked through and slightly charred.
