Ingredients
- Chicken breast
- 1 pound, cut into strips
- Olive oil
- 2 tablespoons

- Bell peppers
- 2, cut into chunks (use a mix of red, yellow, and green for color)
- Onion
- 1 large, cut into wedges
- Bacon
- 4 slices, cooked and crumbled
- Cheddar cheese
- 1 cup, shredded
- Tortillas
- 4, for serving
- Guacamole
- 1 cup, for serving
- Salsa
- 1 cup, for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the chicken strips with olive oil, salt, and pepper. Toss to coat well and let marinate for at least 15 minutes.
- Thread the marinated chicken, bell peppers, and onion wedges onto skewers, alternating between the ingredients for a colorful presentation.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes.
- Meanwhile, warm the tortillas on the grill or stovetop until they are soft and pliable.
- To assemble, place a tortilla on a plate and top with a portion of the grilled chicken, vegetables, crumbled bacon, and a generous sprinkle of shredded cheese.
- Fold the tortilla in half and repeat with the remaining tortillas and ingredients.
- Serve the alambres immediately with salsa and guacamole on the side for dipping.
