Almojabanas

Ingredients
- Colombian cheese (queso blanco)

- Cornmeal
- 1 cup

Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix until well blended.
- In a separate bowl, whisk together the melted butter, eggs, and milk until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the grated Colombian cheese, ensuring it's evenly distributed throughout the batter.
- Using a spoon or ice cream scoop, drop generous spoonfuls of the batter onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for 20-25 minutes, or until the almojabanas are golden brown and crisp on the outside.
