Ingredients

Colombian cheese (queso blanco)
1 cup, grated
Milk
1/2 cup
Eggs
2 large
Unsalted butter
1/4 cup, melted
Sugar
2 tablespoons
Salt
1/2 teaspoon
Baking powder
1 teaspoon
Cornmeal
1 cup
All-purpose flour
1/2 cup

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix until well blended.
  3. In a separate bowl, whisk together the melted butter, eggs, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in the grated Colombian cheese, ensuring it's evenly distributed throughout the batter.
  6. Using a spoon or ice cream scoop, drop generous spoonfuls of the batter onto the prepared baking sheet, spacing them a couple of inches apart.
  7. Bake for 20-25 minutes, or until the almojabanas are golden brown and crisp on the outside.
  8. Remove from the oven and let cool slightly before serving warm.
