Instructions
- In a large mixing bowl, whisk together the almond flour, baking powder, and salt until well combined.
- In another bowl, beat the eggs and then add the milk and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the pancakes fluffy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil or butter.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface of the pancake.
- Carefully flip the pancake and cook for an additional 1-2 minutes, or until both sides are golden brown.
- Remove the pancakes from the skillet and keep them warm in a low oven while you repeat with the remaining batter.
- Serve the pancakes warm, topped with a drizzle of maple syrup and a handful of fresh berries, if desired.
Tips
- For extra flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
- You can also incorporate finely chopped nuts or chocolate chips for added texture.
- If the batter seems too thick, add a little more milk to reach your desired consistency.
