Ingredients

Almond flour
1 cup
Eggs
2 large
Milk (dairy or plant-based)
1/2 cup
Vanilla extract
1 teaspoon
Baking powder
1 teaspoon
Salt
1/4 teaspoon
Fresh berries
to taste (optional, for topping)
Maple syrup
to taste (optional, for serving)

Instructions

  1. In a large mixing bowl, whisk together the almond flour, baking powder, and salt until well combined.
  2. In another bowl, beat the eggs and then add the milk and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the pancakes fluffy.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil or butter.
