Ingredients
- Almond flour
- 1 cup
- Eggs
- 2 large
- Milk (dairy or plant-based)
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Baking powder
- 1 teaspoon
- Salt
- 1/4 teaspoon
- Fresh berries

- Maple syrup

Instructions
- In a large mixing bowl, whisk together the almond flour, baking powder, and salt until well combined.
- In another bowl, beat the eggs and then add the milk and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the pancakes fluffy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with a small amount of oil or butter.
- Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface of the pancake.
- Carefully flip the pancake and cook for an additional 1-2 minutes, or until both sides are golden brown.
