Ingredients

Original recipe serves 4

Almonds
1 cup, soaked in water for at least 4 hours or overnight
Plain yogurt
1 cup, preferably whole milk yogurt for creaminess
Milk
1 cup, chilled (use almond milk for a dairy-free option)
Granulated sugar
2 tablespoons, adjust to taste
Cardamom powder
1/2 teaspoon
Ice cubes
1 cup
Chopped almonds
2 tablespoons, for garnish
Saffron strands
a pinch, for garnish (optional)

Instructions

  1. Soak the almonds in water for at least 4 hours or overnight to soften them, making blending easier.
  2. After soaking, drain the almonds and place them in a blender along with the yogurt, chilled milk, sugar, cardamom powder, and ice cubes.
  3. Blend the mixture on high speed until smooth and frothy, ensuring no almond pieces remain. The texture should be creamy and well combined.
  4. Taste the lassi and adjust the sweetness by adding more sugar if desired, blending again briefly to mix.
  5. Pour the lassi into serving glasses and garnish with chopped almonds and a pinch of saffron strands for an elegant touch.
  6. Serve immediately, chilled, to fully enjoy the refreshing and rich flavors.

Tips

  • 💡 For a vegan version, substitute the yogurt with dairy-free yogurt and use almond milk.
  • 💡 Experiment with flavors by adding a splash of rose water or mango puree for a fruity twist.
  • 💡 If you're in a hurry, you can use pre-ground almond flour instead of soaking and blending whole almonds.
