Instructions
- In a large pot, bring 4 cups of water to a rolling boil over high heat.
- Gradually add 2 cups of yam flour to the boiling water, stirring continuously with a wooden spoon or spatula to prevent lumps from forming.
- Once the yam flour is fully incorporated, reduce the heat to low and continue stirring for about 5-7 minutes until the mixture thickens and forms a smooth, elastic dough-like consistency.
- Cover the pot with a lid and allow the Amala to cook on low heat for an additional 10 minutes, allowing the flavors to meld.
- In a separate small saucepan, heat 1/2 cup of palm oil over medium heat until hot but not smoking.
- Stir in 1 teaspoon of salt into the hot palm oil and mix well to create a simple sauce.
- Remove the Amala from heat and let it rest for a minute before serving.
