Aplets and Cotlets
Aplets and Cotlets are delightful fruit and nut candies originating from the Pacific Northwest. These chewy confections, made with the natural sweetness of apples and apricots, combined with crunchy walnuts, are dusted with powdered sugar for a sweet finish. This candy has roots dating back to the early 20th century when it was first created by Armenian immigrants in Washington State, combining traditional Middle Eastern ingredients with local fruits.

Ingredients
- Unflavored gelatin
- 1 tablespoon
- Water
- 1/2 cup
- Granulated sugar
- 1 cup
- Unsweetened applesauce
- 1 cup
- Dried apricots
- 1 cup, chopped
- Walnuts
- 1 cup, chopped
- Lemon juice
- 2 tablespoons
- Powdered sugar
- 1/2 cup (for dusting)
Instructions
- In a large saucepan, sprinkle the gelatin over the water and let it stand for 5 minutes to soften.
- Add the granulated sugar to the saucepan, and heat over medium heat, stirring constantly until the sugar and gelatin are completely dissolved.
- Stir in the unsweetened applesauce, chopped dried apricots, chopped walnuts, and lemon juice until well combined.
- Pour the mixture into a greased 8-inch square pan, spreading evenly. Refrigerate until firm, about 3 hours.
- Once set, remove the candy from the pan and cut it into squares.
- Roll each piece in powdered sugar to coat evenly, adding an extra layer of sweetness and preventing sticking.
- Store the Aplets and Cotlets in an airtight container at room temperature for up to 2 weeks.
