2 tablespoons
Potatoes
4 medium, peeled and diced
Onion
1 medium, diced
Garlic
2 cloves, minced
Apples
2 medium, cored and diced
Fresh thyme
1 tablespoon, chopped (plus extra for garnish)
Apple cider vinegar
1 tablespoon
Salt
to taste
Pepper
to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the diced potatoes to the skillet and cook, stirring occasionally, until they start to brown and become tender, about 10 minutes.
  3. Stir in the diced onion and minced garlic. Season with salt, pepper, and chopped thyme. Cook for an additional 5 minutes, until the onions are translucent.
  4. Add the diced apples to the skillet and continue to cook for another 10 minutes, stirring occasionally, until the apples are soft and the potatoes are fully cooked.
  5. Drizzle the apple cider vinegar over the hash and stir to combine. Cook for an additional 2 minutes to let the flavors meld.
  6. Remove from heat and garnish with additional fresh thyme if desired. Serve warm.
