Ingredients
- Apple cider (1 cup)
- All-purpose flour (2 1/2 cups)
- Granulated sugar (1 cup)
- Baking powder (2 teaspoons)
- Baking soda (1/2 teaspoon)
- Salt (1/2 teaspoon)
- Ground cinnamon (1 teaspoon)
- Ground nutmeg (1/4 teaspoon)
- Eggs (2, beaten)
- Milk (1/2 cup)
- Vanilla extract (1 teaspoon)
- Unsalted butter (1/4 cup, melted)
- Vegetable oil (for frying)
- Cinnamon sugar (1 cup (for coating))
Instructions
- In a large mixing bowl, whisk together the granulated sugar, melted butter, and beaten eggs until well combined.
- In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
- Gradually add the dry ingredients to the wet mixture, alternating with the apple cider and milk. Mix until just combined, then stir in the vanilla extract.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour to allow it to firm up.
- In a deep fryer or large pot, heat enough vegetable oil to submerge the doughnuts at 375°F (190°C). Be cautious not to overcrowd the pot.
- On a floured surface, roll out the chilled dough to a thickness of 1/2 inch. Use a doughnut cutter to cut out doughnut shapes.
- Carefully lower the doughnuts into the hot oil, frying a few at a time until they are golden brown on both sides, about 2-3 minutes each. Drain on paper towels.
- While the doughnuts are still warm, roll them in the prepared cinnamon sugar to coat evenly.
