Apricot Cobbler Bars

Instructions
- Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, allowing some overhang for easy removal.
- In a large bowl, whisk together the flour, sugar, and salt. Add the cold, cubed butter and cut it into the dry mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Reserve 1 1/2 cups of the crumb mixture for the streusel topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to create an even crust.
