Original recipe serves 8

Vanilla ice cream
1 scoop per serving
Chopped pecans
1/2 cup
Rolled oats
3/4 cup
Brown sugar
1/2 cup
Unsalted butter
1/2 cup, melted
Flour tortillas
8 (6-inch)
Cinnamon
1 teaspoon
Cornstarch
2 tablespoons
Granulated sugar
1/2 cup
Apricots
2 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are fully coated.
  3. Take each flour tortilla and place a spoonful of the apricot mixture in the center. Roll it up like a burrito, folding in the sides to seal the filling.
  4. Arrange the filled and rolled tortillas in a baking dish.
  5. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped pecans. Stir together until you have a crumbly mixture.
  6. Evenly sprinkle the crumbly topping over the burritos in the baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the burritos are golden brown and the apricot filling is bubbling.
  8. Allow them to cool slightly, then serve the Apricot Cobbler Burritos warm, topped with a scoop of vanilla ice cream.
