Apricot Cobbler Burritos

Experience a blissful blend of flavors with these Apricot Cobbler Burritos. This unique take on the traditional cobbler can transport you to the summer orchards of California, where apricots are aplenty. The luscious apricot filling is snuggled perfectly within a soft tortilla, topped with a delectably crunchy cobbler topping. The final touch of a scoop of vanilla ice cream makes it a heavenly dessert.

Ingredients

Vanilla ice cream
1 scoop per serving
Chopped pecans
1/2 cup
Rolled oats
3/4 cup
Brown sugar
1/2 cup
Unsalted butter
1/2 cup, melted
Flour tortillas
8 (6-inch)
Cinnamon
1 teaspoon
Cornstarch
2 tablespoons
Granulated sugar
1/2 cup
Apricots
2 cups, pitted and sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are fully coated.
  3. Take each flour tortilla and place a spoonful of the apricot mixture in the center. Roll it up like a burrito, folding in the sides to seal the filling.
  4. Arrange the filled and rolled tortillas in a baking dish.
  5. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped pecans. Stir together until you have a crumbly mixture.
  6. Evenly sprinkle the crumbly topping over the burritos in the baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the burritos are golden brown and the apricot filling is bubbling.
  8. Allow them to cool slightly, then serve the Apricot Cobbler Burritos warm, topped with a scoop of vanilla ice cream.
