Apricot Cobbler Burritos

- 1/2 cup Chopped pecans
- 3/4 cup Rolled oats
- 1/2 cup Brown sugar
- 1/2 cup, melted Unsalted butter
- 8 (6-inch) Flour tortillas
- 1 teaspoon Cinnamon
- 2 tablespoons Cornstarch
- 1/2 cup Granulated sugar
- 2 cups, pitted and sliced Apricots

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are fully coated.
- Take each flour tortilla and place a spoonful of the apricot mixture in the center. Roll it up like a burrito, folding in the sides to seal the filling.
- Arrange the filled and rolled tortillas in a baking dish.
- In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped pecans. Stir together until you have a crumbly mixture.
