Ingredients
- Fresh apricots
- 4 cups, pitted and sliced
- Sugar
- 1 cup
- All-purpose flour
- 1 1/2 cups
- Baking powder
- 2 teaspoons
- Salt
- 1/4 teaspoon
- Curry powder
- 1 teaspoon
- Unsalted butter
- 1/2 cup, melted
- Milk
- 1 cup
- Vanilla extract
- 1 teaspoon
- Whipped cream or vanilla ice cream
- for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots and sugar. Toss until the apricots are evenly coated. Let this mixture sit for 15 minutes to macerate, allowing the sugar to draw out the apricot juices.
- In a separate bowl, whisk together the flour, baking powder, salt, and curry powder.
- Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
- Pour the apricot mixture into a lightly greased 9x13-inch baking dish, spreading it out evenly.
- Dollop spoonfuls of the cobbler batter over the apricots, covering as much of the surface as you can.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the apricots are bubbling.
- Remove the cobbler from the oven and let it cool for a few minutes to allow the filling to set.
- Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
Tips
- The cobbler can be made with canned apricots in a pinch. Just be sure to adjust the sugar according to the sweetness of the fruit.
- You can experiment with different curry powders to find the blend that suits your taste.
- For a gluten-free version, substitute the all-purpose flour with your favorite gluten-free flour blend.
