Golden Apricot Cobbler Custard

- Unsalted butter
- 1/4 cup, melted
- Salt
- 1/2 teaspoon
- Baking powder
- 2 teaspoons
- Sugar for apricots
- 1/2 cup
- Sugar for topping

- All-purpose flour
- 1 cup
- Eggs
- 2, large
- Milk
- 1 cup
- Vanilla extract
- 1 teaspoon
- Cornstarch
- 1 tablespoon
- Apricots
- 2 cups, pitted and chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chopped apricots, 1/2 cup of sugar, cornstarch, and vanilla extract. Stir well to coat the apricots in the sugar and set aside to macerate for about 10 minutes.
- In a separate bowl, whisk together the milk and eggs until well combined.
- In another bowl, sift together the all-purpose flour, the remaining 1/2 cup of sugar, baking powder, and salt. Stir to ensure the ingredients are well mixed.
- Pour the melted unsalted butter into a 9x9-inch baking dish, making sure the bottom is evenly coated.
- Spread the apricot mixture evenly over the melted butter.
- Gently pour the milk and egg mixture over the apricots, trying not to disturb the fruit arrangement.
- Evenly sprinkle the flour and sugar mixture over the top, covering the custard entirely.
- Bake for 35-40 minutes, or until the cobbler topping is golden brown and the custard has set. A knife inserted into the center should come out clean.
- Allow the cobbler custard to cool for at least 15 minutes before serving to allow the custard to set. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
