Golden Apricot Cobbler Custard

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chopped apricots, 1/2 cup of sugar, cornstarch, and vanilla extract. Stir well to coat the apricots in the sugar and set aside to macerate for about 10 minutes.
- In a separate bowl, whisk together the milk and eggs until well combined.
- In another bowl, sift together the all-purpose flour, the remaining 1/2 cup of sugar, baking powder, and salt. Stir to ensure the ingredients are well mixed.
- Pour the melted unsalted butter into a 9x9-inch baking dish, making sure the bottom is evenly coated.
- Spread the apricot mixture evenly over the melted butter.
