Unsalted butter
1/4 cup, melted

Baking powder

2 cups, pitted and chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the chopped apricots, 1/2 cup of sugar, cornstarch, and vanilla extract. Stir well to coat the apricots in the sugar and set aside to macerate for about 10 minutes.
  3. In a separate bowl, whisk together the milk and eggs until well combined.
  4. In another bowl, sift together the all-purpose flour, the remaining 1/2 cup of sugar, baking powder, and salt. Stir to ensure the ingredients are well mixed.
  5. Pour the melted unsalted butter into a 9x9-inch baking dish, making sure the bottom is evenly coated.
  6. Spread the apricot mixture evenly over the melted butter.
  7. Gently pour the milk and egg mixture over the apricots, trying not to disturb the fruit arrangement.
  8. Evenly sprinkle the flour and sugar mixture over the top, covering the custard entirely.
  9. Bake for 35-40 minutes, or until the cobbler topping is golden brown and the custard has set. A knife inserted into the center should come out clean.
  10. Allow the cobbler custard to cool for at least 15 minutes before serving to allow the custard to set. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
