Apricot Cobbler French Toast

Experience the unique fusion of a classic apricot cobbler with the creamy comfort of French toast. This recipe brings together the tangy sweetness of ripe apricots, a hint of warm cinnamon, and the velvety richness of French toast. It's a symphony of flavors and textures that will delight your taste buds and brighten your breakfast table. Inspired by the traditional cobblers of the Southern United States and the famous French toast of Parisian cafes, this dish is truly a culinary journey.

Servings: 4

Ingredients

  • Powdered sugar (1/4 cup, for dusting)
  • Unsalted butter (2 tablespoons)
  • Vanilla extract (1 teaspoon)
  • Milk (1 cup)
  • Eggs (4, beaten)
  • Bread (8 slices, preferably day-old)
  • Cinnamon (1/2 teaspoon)
  • Cornstarch (2 tablespoons)
  • Granulated sugar (1/2 cup)
  • Apricots (2 cups, pitted and sliced)

Instructions

  1. Preheat the oven to 350°F (175°C), and grease a baking dish with a bit of butter.
  2. In a medium saucepan, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are well-coated. Cook over medium heat, stirring occasionally until the mixture thickens and the apricots are tender. This should take about 5-7 minutes. Once done, remove from heat and set aside.
  3. In a shallow dish, whisk together the beaten eggs, milk, and vanilla extract. This will be your French toast batter.
  4. Dip each slice of bread into the egg mixture, ensuring both sides are well soaked.
  5. In a large skillet, melt the butter over medium heat. Add the soaked bread slices and cook until golden brown on both sides, about 2-3 minutes per side.
  6. Arrange the cooked French toast slices in the prepared baking dish. Spoon the apricot mixture evenly over the top.
  7. Bake in the preheated oven for 20-25 minutes, or until the French toast is firm and the apricot topping is bubbly and caramelized.
  8. Remove from the oven and let cool for a few minutes. Dust the top generously with powdered sugar.
  9. Serve warm, ideally with a side of whipped cream or vanilla ice cream for an extra indulgent touch. Enjoy!
