Powdered sugar

8 slices, preferably day-old
Cinnamon

Apricots
2 cups, pitted and sliced

Instructions

  1. Preheat the oven to 350°F (175°C), and grease a baking dish with a bit of butter.
  2. In a medium saucepan, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are well-coated. Cook over medium heat, stirring occasionally until the mixture thickens and the apricots are tender. This should take about 5-7 minutes. Once done, remove from heat and set aside.
  3. In a shallow dish, whisk together the beaten eggs, milk, and vanilla extract. This will be your French toast batter.
  4. Dip each slice of bread into the egg mixture, ensuring both sides are well soaked.
  5. In a large skillet, melt the butter over medium heat. Add the soaked bread slices and cook until golden brown on both sides, about 2-3 minutes per side.
  6. Arrange the cooked French toast slices in the prepared baking dish. Spoon the apricot mixture evenly over the top.
