Apricot Cobbler French Toast

Instructions
- Preheat the oven to 350°F (175°C), and grease a baking dish with a bit of butter.
- In a medium saucepan, combine the sliced apricots, granulated sugar, cornstarch, and cinnamon. Stir until the apricots are well-coated. Cook over medium heat, stirring occasionally until the mixture thickens and the apricots are tender. This should take about 5-7 minutes. Once done, remove from heat and set aside.
- In a shallow dish, whisk together the beaten eggs, milk, and vanilla extract. This will be your French toast batter.
- Dip each slice of bread into the egg mixture, ensuring both sides are well soaked.
- In a large skillet, melt the butter over medium heat. Add the soaked bread slices and cook until golden brown on both sides, about 2-3 minutes per side.
- Arrange the cooked French toast slices in the prepared baking dish. Spoon the apricot mixture evenly over the top.
- Bake in the preheated oven for 20-25 minutes, or until the French toast is firm and the apricot topping is bubbly and caramelized.
