Ingredients
- Salt (1/4 teaspoon)
- Cinnamon (1 teaspoon)
- Vanilla extract (1 teaspoon)
- Honey (1/4 cup)
- Coconut oil (1/4 cup, melted)
- Dried apricots (1 cup, chopped)
- Almonds (1 cup, chopped)
- Old (fashioned oats - 3 cups)
Instructions
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, chopped almonds, and dried apricots.
- In a separate small bowl, whisk together the melted coconut oil, honey, vanilla extract, cinnamon, and salt.
- Pour the wet mixture over the dry ingredients and stir until everything is well coated.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.
