Ingredients

Original recipe serves 10

Old-fashioned oats
3 cups
Dried apricots
1 cup, chopped
Almonds
1 cup, chopped
Coconut oil
1/3 cup, melted
Honey
1/2 cup
Vanilla extract
1 teaspoon
Cinnamon
1 teaspoon
Salt
1/4 teaspoon

Instructions

  1. Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the old-fashioned oats, chopped almonds, and dried apricots, mixing until well distributed.
  3. In a separate small bowl, whisk together the melted coconut oil, honey, vanilla extract, cinnamon, and salt until smooth and well combined.
  4. Pour the wet mixture over the dry ingredients and stir thoroughly until everything is evenly coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet, ensuring it's in a single layer for even baking.
  6. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy. Keep a close eye on it to prevent burning.
  7. Remove from the oven and let it cool completely on the baking sheet to achieve maximum crunchiness before transferring it to an airtight container for storage.
  8. Serve with yogurt, milk, or enjoy as a standalone snack. For a refreshing twist, sprinkle it over fresh fruit or mix it with your favorite nut butter.

Tips

  • 💡 For a nut-free version, substitute the almonds with sunflower seeds or pumpkin seeds.
  • 💡 Feel free to add other dried fruits such as raisins or cranberries for additional flavor.
  • 💡 Store the granola in an airtight container at room temperature for up to two weeks.
