Ingredients

Fresh apricots
4 cups, sliced
Granulated sugar
1/2 cup, divided
Lemon juice
1 tablespoon
All-purpose flour

Baking powder
1 teaspoon
Salt

1/4 cup, cold and cubed
Milk
1/2 cup
Vanilla extract
1 teaspoon
Vanilla yogurt
2 cups
Whipped cream
1 cup
Fresh mint leaves
for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apricots, 1/4 cup of sugar, and lemon juice. Toss to coat the apricots evenly and let it sit for 10 minutes to allow the flavors to meld.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
