- Fresh apricots
- 4 cups, sliced
- Granulated sugar
- 1/2 cup, divided
- Lemon juice
- 1 tablespoon
- All-purpose flour
- 1 cup
- Baking powder
- 1 teaspoon
- Salt
- 1/4 teaspoon
- Unsalted butter
- 1/4 cup, cold and cubed
- Milk
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Vanilla yogurt
- 2 cups
- Whipped cream
- 1 cup
- Fresh mint leaves

Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the sliced apricots, 1/4 cup of sugar, and lemon juice. Toss to coat the apricots evenly and let it sit for 10 minutes to allow the flavors to meld.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and vanilla extract. Stir until just combined, being careful not to overmix.
- Transfer the apricot mixture to a baking dish. Sprinkle the cobbler topping evenly over the apricots.
- Bake in the preheated oven for 25-30 minutes, or until the cobbler topping is golden brown and the apricots are bubbling.
