Ripe apricots
4 cups, pitted and sliced
Granulated sugar
1/2 cup
Brown sugar
1/4 cup
All-purpose flour
1/2 cup
Lemon juice
1 tablespoon
Ground cinnamon
1 teaspoon
Salt
1/4 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Old-fashioned oats
1/2 cup
Vanilla ice cream
for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, gently combine the sliced apricots, granulated sugar, flour, lemon juice, cinnamon, and salt. Toss until the apricots are well coated.
  3. Transfer the apricot mixture to a 9-inch pie dish, spreading it evenly.
  4. In a separate bowl, mix the cold cubed butter, brown sugar, oats, flour, and ground cinnamon. Use your fingers or a pastry cutter to blend the mixture until it resembles coarse crumbs.
  5. Sprinkle the crumb topping evenly over the apricot mixture in the pie dish.
  6. Bake for 40-45 minutes or until the topping is golden brown and the apricots are bubbling around the edges.
