
Apricot Cobbler Pie
This delicious apricot cobbler pie combines the sweetness of ripe apricots with a buttery cobbler topping.
Ingredients
- Vanilla ice cream (for serving)
- Ground cinnamon (1/2 teaspoon)
- All (purpose flour - 1/2 cup)
- Old (fashioned oats - 1/2 cup)
- Brown sugar (1/2 cup)
- Unsalted butter (1/2 cup, cold and cubed)
- Salt (1/4 teaspoon)
- Cinnamon (1 teaspoon)
- Lemon juice (1 tablespoon)
- All (purpose flour - 1/4 cup)
- Granulated sugar (1 cup)
- Apricots (6 cups, pitted and sliced)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, granulated sugar, flour, lemon juice, cinnamon, and salt. Toss until the apricots are well coated.
- Transfer the apricot mixture to a 9-inch pie dish.
- In a separate bowl, combine the cold cubed butter, brown sugar, oats, flour, and ground cinnamon. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the apricot mixture.
- Bake for 40-45 minutes, or until the topping is golden brown and the apricots are bubbling.
- Remove from the oven and let cool for a few minutes.
- Serve warm with a scoop of vanilla ice cream on top.
