Apricot Cobbler Porridge

- Rolled oats

- Milk

- Honey

- All-purpose flour
- 1/2 cup
- Brown sugar
- 1/4 cup
- Unsalted butter
- 4 tablespoons, cold and cubed

Instructions
- In a medium saucepan, combine the rolled oats, milk, chopped dried apricots, honey, cinnamon, and vanilla extract.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the oats are tender and the porridge has thickened.
- While the porridge cooks, prepare the cobbler topping. In a mixing bowl, combine the all-purpose flour, brown sugar, and a pinch of salt.
- Add the cold, cubed unsalted butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs.
