Indulge in the heavenly fusion of traditional flaky scones and sweet, tangy apricot cobbler with this phenomenal recipe. Born out of the harmonious marriage between British and American desserts, these scones are perfect for a delightful breakfast or a cozy afternoon tea.

Servings: 8

Ingredients

Turbinado sugar
2 tablespoons, for topping
Apricot chunks
1 cup
Apricot preserves
1/2 cup
Heavy cream
1 cup
Unsalted butter
1/2 cup, cold and cubed
Salt
1/2 teaspoon
Baking powder
1 tablespoon
Granulated sugar
1/4 cup
All-purpose flour
2 cups

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent the scones from sticking.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. This process is important for achieving flaky scones.
  4. Pour in the heavy cream and mix gently until the dough just starts to come together. Be careful not to overmix as it can lead to tough scones.
  5. Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together into a ball.
  6. Roll out the dough into a 1/2-inch thick rectangle. This thickness is crucial for ensuring the scones have a good rise.
  7. Spread the apricot preserves evenly over the dough, leaving a small border around the edges. Then, sprinkle the apricot chunks over the preserves.
  8. Starting from one of the long sides, tightly roll up the dough into a log. Ensure the roll is tight to prevent the filling from spilling out.
  9. Using a sharp knife, cut the log into 8 equal slices. This will ensure even baking.
  10. Place the slices onto the prepared baking sheet, leaving ample space between each slice to allow for expansion during baking.
  11. Sprinkle the tops of the scones with turbinado sugar. This will give the scones a delightful crunch and a beautiful golden-brown color.
  12. Bake in the preheated oven for 20-25 minutes, or until the scones are golden brown and cooked through.
  13. Allow the scones to cool slightly on the baking sheet before serving. Enjoy the scones warm with a dollop of cream for an extra indulgent treat!
