Ingredients

Apricots
2 cups, sliced
Sugar
1/2 cup
Cornstarch
1 tablespoon
Cinnamon
1/2 teaspoon
Vanilla Extract
1 teaspoon
Refrigerated Pie Crust
2 sheets
Egg
1, beaten
Powdered Sugar
for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, sugar, cornstarch, cinnamon, and vanilla extract. Stir well to ensure the apricots are evenly coated.
  3. Unroll the refrigerated pie crust sheets. Cut each sheet into 6 equal squares.
  4. Spoon a generous amount of the apricot mixture onto the center of each square.
  5. Fold the corners of each square over the apricot filling, forming a triangle. Press the edges firmly to seal.
  6. Arrange the apricot wraps on a baking sheet lined with parchment paper.
  7. Lightly brush the tops of the wraps with the beaten egg. This will help them achieve a beautiful golden color.
  8. Bake for 20-25 minutes, until the wraps are golden brown and the filling is bubbly.
