Apricot Cobbler Wraps

Ingredients
- Apricots
- 2 cups, sliced
- Sugar
- 1/2 cup
- Cornstarch
- 1 tablespoon
- Cinnamon
- 1/2 teaspoon
- Vanilla Extract
- 1 teaspoon
- Refrigerated Pie Crust
- 2 sheets
- Egg
- 1, beaten
- Powdered Sugar
- for dusting
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, sugar, cornstarch, cinnamon, and vanilla extract. Stir well to ensure the apricots are evenly coated.
- Unroll the refrigerated pie crust sheets. Cut each sheet into 6 equal squares.
- Spoon a generous amount of the apricot mixture onto the center of each square.
- Fold the corners of each square over the apricot filling, forming a triangle. Press the edges firmly to seal.
- Arrange the apricot wraps on a baking sheet lined with parchment paper.
- Lightly brush the tops of the wraps with the beaten egg. This will help them achieve a beautiful golden color.
- Bake for 20-25 minutes, until the wraps are golden brown and the filling is bubbly.
- Remove the wraps from the oven and allow them to cool for a few minutes. This will make them easier to handle and the flavors more pronounced.
- Just before serving, sprinkle a light dusting of powdered sugar over the wraps for an extra touch of sweetness.
