Serves 4

Ingredients

Honey
2 tablespoons
Granola
1/2 cup
Greek yogurt
2 cups
Cinnamon
1/2 teaspoon
Cornstarch
1 tablespoon
Sugar
1/4 cup
Apricots
2 cups, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium-sized bowl, combine the sliced apricots, sugar, cornstarch, and cinnamon. Ensure the apricots are well coated.
  3. Transfer the apricot mixture to a baking dish, spreading it out evenly.
  4. Bake in the preheated oven for 15-20 minutes, or until the apricots are soft and the mixture is bubbly.
  5. Remove the baking dish from the oven and let it cool for a few minutes.
  6. To assemble the parfaits, create layers in serving glasses, starting with Greek yogurt, followed by the baked apricot mixture, and then a layer of granola. Repeat these layers until the glasses are filled.
  7. Finish off with a generous drizzle of honey on top.
  8. Serve immediately for the best taste and texture. Enjoy this delightful blend of flavors that makes breakfast feel like dessert.

Tips

  • 💡 For a sweeter parfait, consider using vanilla Greek yogurt.
  • 💡 You can also add nuts or dried fruits to the granola for extra flavor and texture.
  • 💡 If apricots are not in season, you can substitute with peaches or plums.
