Ingredients

Apricots
4 cups, sliced
Granulated sugar
1/4 cup
Cornstarch
2 tablespoons
Ground cinnamon

Flour tortillas
4 large
Unsalted butter
1/4 cup, melted
Brown sugar
1/4 cup
Rolled oats
3/4 cup
Vanilla extract
1 teaspoon
Whipped cream or ice cream
for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, and ground cinnamon. Gently mix until the apricots are well-coated.
  3. Lay out the flour tortillas and place a generous spoonful of the apricot mixture in the center of each tortilla. Roll each tortilla up tightly, folding in the sides to create a burrito shape.
