- Apricots
- 4 cups, sliced
- Granulated sugar
- 1/4 cup
- Cornstarch
- 2 tablespoons
- Ground cinnamon
- 1 teaspoon
- Flour tortillas
- 4 large
- Unsalted butter
- 1/4 cup, melted
- Brown sugar
- 1/4 cup
- Rolled oats
- 3/4 cup
- Vanilla extract
- 1 teaspoon
- Whipped cream or ice cream

Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, and ground cinnamon. Gently mix until the apricots are well-coated.
- Lay out the flour tortillas and place a generous spoonful of the apricot mixture in the center of each tortilla. Roll each tortilla up tightly, folding in the sides to create a burrito shape.
- In another bowl, combine the melted butter, brown sugar, rolled oats, and vanilla extract. Stir until the mixture is crumbly and well-combined.
- Arrange the rolled apricot burritos seam-side down in a greased baking dish. Evenly sprinkle the oat mixture over the top of the burritos.
