- Salt
- 1/4 teaspoon

- Rolled oats
- 1 cup
- Brown sugar
- 1/2 cup
- Unsalted butter
- 4 tablespoons, melted
- Flour tortillas
- 4 (10-inch) tortillas
- Lemon juice
- 1 tablespoon
- Cornstarch
- 1 tablespoon
- Granulated sugar
- 1/4 cup
- Apricots
- 4 cups, sliced and pitted
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Gently mix until the apricots are well-coated.
- Lay each flour tortilla flat on a clean surface. Place a generous spoonful of the apricot mixture into the center of each tortilla and roll it up tightly like a burrito, folding the sides in to secure the filling.
