
Apricot Crisp Burritos

Ingredients

- All (purpose flour - 1/4 cup)
- Rolled oats (1/2 cup)
- Brown sugar (1/2 cup)
- Butter (4 tablespoons, melted)
- Flour tortillas (6)
- Lemon juice (1 tablespoon)
- Ground cinnamon (1 teaspoon)
- Cornstarch (2 tablespoons)
- Granulated sugar (1/2 cup)
- Apricots (4 cups, sliced)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the sliced apricots, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Mix well to coat the apricots.
- Place a spoonful of the apricot mixture onto each flour tortilla and roll it up like a burrito.
- In a separate bowl, combine the melted butter, brown sugar, rolled oats, all-purpose flour, ground cinnamon, and salt. Mix until crumbly.
- Place the rolled apricot burritos in a baking dish and sprinkle the crumbly mixture on top.
