Serves 4

Ingredients

Salt
1/4 teaspoon
Ground cinnamon
1 teaspoon
Rolled oats
1 cup
Brown sugar
1/2 cup
Unsalted butter
4 tablespoons, melted
Flour tortillas
4 (10-inch) tortillas
Lemon juice
1 tablespoon
Cornstarch
1 tablespoon
Granulated sugar
1/4 cup
Apricots
4 cups, sliced and pitted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Gently mix until the apricots are well-coated.
  3. Lay each flour tortilla flat on a clean surface. Place a generous spoonful of the apricot mixture into the center of each tortilla and roll it up tightly like a burrito, folding the sides in to secure the filling.
  4. In another bowl, combine the melted butter, brown sugar, rolled oats, all-purpose flour, ground cinnamon, and salt. Mix together until the mixture is crumbly.
  5. Arrange the rolled apricot burritos in a greased baking dish, seam side down. Sprinkle the crumbly topping evenly over the burritos.
  6. Bake in the preheated oven for 25 minutes, or until the burritos are golden brown and the topping is crispy.
  7. Serve the apricot crisp burritos warm, and for an extra indulgence, top with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips

  • 💡 For added flavor, consider adding a pinch of nutmeg to the apricot filling.
  • 💡 Feel free to substitute dried apricots if fresh ones are not available; just soak them in warm water for about 30 minutes before using.
  • 💡 Experiment with other fruits like peaches or cherries for a different twist on this recipe.
