Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, ground cinnamon, and lemon juice. Gently mix until the apricots are well-coated.
- Lay each flour tortilla flat on a clean surface. Place a generous spoonful of the apricot mixture into the center of each tortilla and roll it up tightly like a burrito, folding the sides in to secure the filling.

- Bake in the preheated oven for 25 minutes, or until the burritos are golden brown and the topping is crispy.
- Serve the apricot crisp burritos warm, and for an extra indulgence, top with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips
- For added flavor, consider adding a pinch of nutmeg to the apricot filling.
- Feel free to substitute dried apricots if fresh ones are not available; just soak them in warm water for about 30 minutes before using.
- Experiment with other fruits like peaches or cherries for a different twist on this recipe.
