Servings: 4
Ingredients
- Lime
- 1, juiced
- Fresh cilantro
- 1/4 cup, chopped
- Cheddar cheese
- 1 cup, shredded
- Flour tortillas
- 4
- Fajita seasoning
- 2 tablespoons
- Olive oil
- 1 tablespoon
- Apricots
- 6, pitted and sliced
- Onion
- 1, thinly sliced
- Bell peppers
- 2, thinly sliced
- Chicken breast
- 2, sliced into thin strips
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chicken strips and brown them evenly, ensuring they're fully cooked. This should take about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
- Using the same skillet, add the bell peppers and onion. Sauté them until they become softened, which should take about 5 minutes.
- Now, add the sliced apricots and fajita seasoning into the skillet. Stir the mixture well to combine, and let it cook for an additional 2 minutes.
- Arrange your flour tortillas on a baking sheet. Evenly distribute the chicken and apricot mixture onto each tortilla, followed by a generous sprinkle of shredded cheddar cheese.
- Bake the fajitas in your preheated oven for 10-12 minutes, or until the cheese has fully melted and is bubbling.
- Remove the fajitas from the oven. Garnish each with a sprinkling of freshly chopped cilantro and a drizzle of fresh lime juice.
- Serve your Sweet & Savory Apricot Crisp Fajitas warm, and enjoy the symphony of flavors!
