Servings: 4

Ingredients

Lime
1, juiced
Fresh cilantro
1/4 cup, chopped
Cheddar cheese
1 cup, shredded
Flour tortillas
4
Fajita seasoning
2 tablespoons
Olive oil
1 tablespoon
Apricots
6, pitted and sliced
Onion
1, thinly sliced
Bell peppers
2, thinly sliced
Chicken breast
2, sliced into thin strips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken strips and brown them evenly, ensuring they're fully cooked. This should take about 5-7 minutes. Once cooked, remove the chicken from the skillet and set it aside.
  3. Using the same skillet, add the bell peppers and onion. Sauté them until they become softened, which should take about 5 minutes.
  4. Now, add the sliced apricots and fajita seasoning into the skillet. Stir the mixture well to combine, and let it cook for an additional 2 minutes.
  5. Arrange your flour tortillas on a baking sheet. Evenly distribute the chicken and apricot mixture onto each tortilla, followed by a generous sprinkle of shredded cheddar cheese.
  6. Bake the fajitas in your preheated oven for 10-12 minutes, or until the cheese has fully melted and is bubbling.
  7. Remove the fajitas from the oven. Garnish each with a sprinkling of freshly chopped cilantro and a drizzle of fresh lime juice.
  8. Serve your Sweet & Savory Apricot Crisp Fajitas warm, and enjoy the symphony of flavors!
