- Unsalted butter (4 tablespoons, divided)
- Onion (1 medium, finely chopped)
- Basmati rice (1 cup, rinsed)
- Chicken broth (2 cups)
- Dried apricots (1 cup, chopped)
- Salt (1/2 teaspoon)
- Cinnamon (1 teaspoon)
- Brown sugar (2 tablespoons)
- Almonds (1/2 cup, chopped)
- Breadcrumbs (1/2 cup)
Instructions
- In a large saucepan, melt 2 tablespoons of unsalted butter over medium heat.
- Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.
- Stir in the rinsed basmati rice, ensuring it is well-coated in the buttery onion mixture.
- Pour in the chicken broth, then add the chopped dried apricots, cinnamon, and salt. Stir to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
