Instructions
- Begin by preheating your oven to 375°F and lining a baking sheet with parchment paper.
- In a medium-sized mixing bowl, combine the diced fresh apricots, granulated sugar, ground cinnamon, and vanilla extract.
- Spoon a heaping tablespoon of the apricot mixture onto the center of each wonton wrapper. Be careful not to overfill to ensure a good seal.
- Using a pastry brush, lightly brush the edges of each wonton wrapper with some of the melted unsalted butter.
- Fold each wonton wrapper diagonally to form a triangle, and press the edges together to create a seal. If needed, moisten the edges with a bit of water to help them stick together.
- Transfer the sealed ravioli onto your prepared baking sheet.
- Brush the tops of each ravioli with the remaining melted butter. This gives the ravioli a beautiful golden hue and a delightful crispness.
- Bake your ravioli in the preheated oven for 15-18 minutes, or until they are golden brown and the edges are crispy. Keep a close eye on them to prevent over-browning.
- Remove the ravioli from the oven and allow them to cool for a few minutes. This helps the filling thicken a bit and makes them easier to handle.
- Before serving, dust each ravioli generously with powdered sugar for a sweet finish. Enjoy these delightful treats while they are still warm.
