Ingredients
- Fresh Apricots
- 1 cup, pitted and chopped
- Greek Yogurt
- 1/2 cup, plain
- Oats
- 1/4 cup, rolled
- Almond Milk
- 1 cup, unsweetened
- Honey
- 1 tablespoon
- Vanilla Extract
- 1/2 teaspoon
- Ice cubes
- 1/2 cup
Instructions
- Start by preparing the apricots. Remove the pits and chop the apricots into chunks.
- In a blender, combine the chopped apricots, Greek yogurt, oats, almond milk, honey, and vanilla extract.
- Add the ice cubes last to keep the blender from getting jammed.
- Blend this mix on high until you achieve a smooth and creamy texture. If the smoothie is too thick, feel free to add a bit more almond milk.
- Pour the smoothie into glasses and serve immediately for best taste and texture.
- Optional: For an extra touch, garnish with a few slices of fresh apricot and a sprinkle of oats.
Tips
- If fresh apricots are not in season, you can also use dried apricots. Just be sure to soak them in water for a couple of hours before using.
