Velvety Apricot Crisp Smoothie

Experience the unique blend of summer freshness and heartwarming winter comfort with this Velvety Apricot Crisp Smoothie. Sweet, juicy apricots meld with the wholesome goodness of oats and a hint of honey to create a smoothie that's more than just a drink, it's a nourishing meal. This smoothie hails from apricot-loving regions of the Mediterranean, where it's a popular pick-me-up for those sunny afternoons.

Serves 2

Ingredients

Fresh Apricots
1 cup, pitted and chopped
Greek Yogurt
1/2 cup, plain
Oats
1/4 cup, rolled
Almond Milk
1 cup, unsweetened
Honey
1 tablespoon
Vanilla Extract
1/2 teaspoon
Ice cubes
1/2 cup

Instructions

  1. Start by preparing the apricots. Remove the pits and chop the apricots into chunks.
  2. In a blender, combine the chopped apricots, Greek yogurt, oats, almond milk, honey, and vanilla extract.
  3. Add the ice cubes last to keep the blender from getting jammed.
  4. Blend this mix on high until you achieve a smooth and creamy texture. If the smoothie is too thick, feel free to add a bit more almond milk.
  5. Pour the smoothie into glasses and serve immediately for best taste and texture.
  6. Optional: For an extra touch, garnish with a few slices of fresh apricot and a sprinkle of oats.

Tips

  • 💡 If fresh apricots are not in season, you can also use dried apricots. Just be sure to soak them in water for a couple of hours before using.
  • 💡 You can also add a scoop of protein powder for an extra nutrient boost.
