Experience the burst of summer in every spoonful of this Apricot Crisp Sorbet! This delightful dessert brings together the natural sweetness of ripe apricots and the crunchy, nutty goodness of an oat crisp topping. The sorbet, churned to perfection, melts in your mouth while the oat crisp adds an exciting texture. This recipe, inspired by the traditional Apricot Crisp dessert, transforms the comfort of a warm, baked dish into a refreshing treat to beat the summer heat.
Servings: 4
Ingredients
- Ripe apricots
- 2 cups, chopped
- Granulated sugar
- 1 cup
- Water
- 1/2 cup
- Lemon juice
- 1 tablespoon
- Oats
- 1/2 cup
- All-purpose flour
- 1/4 cup
- Brown sugar
- 1/4 cup
- Unsalted butter
- 2 tablespoons, melted
- Cinnamon
- 1/2 teaspoon
Instructions
- In a saucepan, combine the chopped apricots, granulated sugar, water, and lemon juice. Cook over medium heat, stirring occasionally until the apricots are soft and the sugar has completely dissolved. This should take about 5 minutes.
- Remove the saucepan from the heat and allow the apricot mixture to cool.
- While the apricot mixture is cooling, prepare the crisp topping. In a mixing bowl, combine the oats, all-purpose flour, brown sugar, melted butter, and cinnamon. Stir until all the ingredients are well mixed.
- Once the apricot mixture has cooled, transfer it to a blender or food processor. Blend until it reaches a smooth consistency.
- Pour the blended apricot mixture into an ice cream maker. Churn according to the manufacturer's instructions, usually for about 20-25 minutes.
- During the last 5 minutes of churning, gradually add the oat crisp topping to the ice cream maker, allowing it to mix into the sorbet.
- After churning, transfer the sorbet into a lidded container. Freeze for at least 2 hours to allow the sorbet to firm up before serving.
- Serve the Apricot Crisp Sorbet in bowls or cones, garnished with a sprinkle of leftover oat crisp topping, if desired. Enjoy this refreshing dessert on a hot summer day!
