Apricot Crisp Spaghetti

This unique and delicious dish combines the sweetness of apricots with the savory flavors of spaghetti and a crispy topping.

Ingredients

  • Fresh basil (1/4 cup, chopped)
  • Parmesan cheese (1/4 cup, grated)
  • Breadcrumbs (1/2 cup)
  • Salt and pepper (to taste)
  • Dried oregano (1 teaspoon)
  • Tomato sauce (1 cup)
  • Garlic (2 cloves, minced)
  • Onion (1, diced)
  • Olive oil (2 tablespoons)
  • Apricots (1 cup, sliced)
  • Spaghetti (8 ounces)

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
  3. Add the sliced apricots to the skillet and cook for 2-3 minutes, until slightly softened.
  4. Stir in the tomato sauce, dried oregano, salt, and pepper. Simmer for 5 minutes.
  5. In a separate small bowl, mix together the breadcrumbs, grated Parmesan cheese, and chopped fresh basil.
  6. Spread the cooked spaghetti in a baking dish. Pour the apricot sauce over the spaghetti and mix well.
  7. Sprinkle the breadcrumb mixture evenly over the top of the spaghetti.
  8. Bake in a preheated oven at 350°F for 20 minutes, or until the topping is golden and crispy.
