
Apricot Crisp Spaghetti
This unique and delicious dish combines the sweetness of apricots with the savory flavors of spaghetti and a crispy topping.
Ingredients
- Fresh basil (1/4 cup, chopped)
- Parmesan cheese (1/4 cup, grated)
- Breadcrumbs (1/2 cup)
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Tomato sauce (1 cup)
- Garlic (2 cloves, minced)
- Onion (1, diced)
- Olive oil (2 tablespoons)
- Apricots (1 cup, sliced)
- Spaghetti (8 ounces)
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.
- Add the sliced apricots to the skillet and cook for 2-3 minutes, until slightly softened.
- Stir in the tomato sauce, dried oregano, salt, and pepper. Simmer for 5 minutes.
- In a separate small bowl, mix together the breadcrumbs, grated Parmesan cheese, and chopped fresh basil.
- Spread the cooked spaghetti in a baking dish. Pour the apricot sauce over the spaghetti and mix well.
- Sprinkle the breadcrumb mixture evenly over the top of the spaghetti.
- Bake in a preheated oven at 350°F for 20 minutes, or until the topping is golden and crispy.
