Ingredients
- Spaghetti
- 8 oz
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, diced
- Garlic
- 2 cloves, minced
- Fresh apricots
- 4, pitted and sliced
- Tomato sauce
- 1 cup
- Dried oregano
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Fresh basil
- 1/4 cup, chopped
- Breadcrumbs
- 1 cup
- Parmesan cheese
- 1/2 cup, grated
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
- Add the sliced apricots to the skillet and sauté for an additional 2-3 minutes until slightly softened.
- Stir in the tomato sauce, dried oregano, salt, and pepper. Let the mixture simmer for 5 minutes to combine the flavors.
- In a separate bowl, mix together the breadcrumbs, grated Parmesan cheese, and chopped fresh basil until well combined.
- Spread the cooked spaghetti evenly in a greased baking dish. Pour the apricot sauce over the spaghetti and mix well to coat the pasta evenly.
- Sprinkle the breadcrumb and cheese mixture evenly over the top of the spaghetti.
