1 tablespoon
Honey
1 tablespoon

1 tablespoon
Garlic, minced
2 cloves
Snap peas
1 cup, trimmed
Red onion, sliced
1 medium
Bell peppers, sliced (any color)
1 cup
Apricots, pitted and sliced
2 cups

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, cornstarch, and water until smooth. Set aside to allow the flavors to meld.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and ginger to the skillet and sauté for about 1 minute until fragrant, being careful not to burn them.
  4. Add the sliced bell peppers, red onion, and snap peas to the skillet. Stir fry for 3-4 minutes, allowing the vegetables to become crisp-tender and vibrant in color.
  5. Push the cooked vegetables to one side of the skillet and add the sliced apricots. Cook for an additional 2 minutes until the apricots are slightly softened and fragrant.
  6. Pour the prepared soy sauce mixture over the vegetables and apricots, stirring well to ensure everything is evenly coated.
  7. Continue to cook for another 2 minutes, allowing the sauce to thicken slightly and envelop the stir fry.
  8. Season with salt and pepper to taste, adjusting as necessary.
  9. Remove the skillet from heat and generously sprinkle the crispy topping over the stir fry just before serving.
  10. Serve hot over steamed rice or quinoa for a complete meal and enjoy the delightful contrast of textures and flavors!
