Apricot Crisp Trifle

Ingredients
- Fresh apricots
- 2 cups, pitted and sliced
- Sugar
- 1/2 cup
- Lemon juice
- 1 tablespoon
- Cornstarch
- 1 tablespoon
- Oats
- 1 cup
- All-purpose flour
- 1/2 cup
- Brown sugar
- 1/2 cup
- Unsalted butter
- 1/2 cup, melted
- Vanilla custard
- 2 cups
- Whipped cream
- 1 cup
- Fresh mint leaves
- for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine the apricots, sugar, lemon juice, and cornstarch. Stir over medium heat until the sugar dissolves and the mixture thickens, approximately 10 minutes. The apricots should be tender but still hold their shape. Remove from heat and set aside to cool.
- In a medium-sized bowl, combine the oats, flour, brown sugar, and melted butter. Stir until the mixture resembles coarse crumbs. Spread this mixture onto a baking sheet.
- Bake the oat mixture in the preheated oven for 10-15 minutes or until it turns golden brown. Remove from oven and let it cool completely.
- Once the components are cool, begin layering the trifle. Start with a layer of vanilla custard at the bottom of your serving glasses or trifle dish, followed by a layer of the cooked apricots, and a layer of the crisp oat topping. Repeat these layers until all ingredients have been used, finishing with a layer of the oat topping.
- Top each trifle with a generous dollop of whipped cream and garnish with fresh mint leaves for a refreshing contrast.
- Refrigerate the trifles for at least 1 hour to allow the flavors to mingle and the trifle to set.
- Serve chilled. Enjoy this delightful fusion of textures and flavors!
Tips
- For a more intense apricot flavor, you can add a splash of apricot brandy to the apricot mixture.
- If fresh apricots are not available, canned apricots (drained and rinsed) or other fruits such as peaches or cherries can be used as a substitute.
