Apricot Crisp Wraps

- 4 Tortilla wraps
- 1/2 cup, cold and cubed Unsalted butter
- 1/4 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 3/4 cup, divided Brown sugar
- 1 cup Rolled oats
- 1/2 cup All-purpose flour
- 1 tablespoon Lemon juice
- 2 cups, sliced Apricots

Instructions
- Preheat the oven to 375°F (190°C).
- In a medium-sized bowl, combine the sliced apricots, 1/4 cup of brown sugar, and lemon juice. Toss until the apricots are well-coated, then set aside.
- In a separate bowl, mix together the all-purpose flour, rolled oats, the remaining 1/2 cup of brown sugar, cinnamon, and salt.
- Add the cold, cubed unsalted butter to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the dry ingredients until the texture resembles coarse crumbs.
- Lay a tortilla wrap on a baking sheet. Spoon a portion of the apricot mixture onto the center of the wrap, leaving a border around the edges.
- Top the apricots with a generous amount of the oat crumble mixture.
- Fold the sides of the tortilla wrap over the filling, then roll it up tightly.
- Repeat the process with the remaining tortilla wraps and filling.
