Honeyed Apricot Crisp with Greek Yogurt
This Honeyed Apricot Crisp with Greek Yogurt is an exquisite dessert that brings together the sweetness of ripe apricots, the tartness of Greek yogurt, and the crunchiness of a cinnamon oat topping. Perfect for a summer evening, this apricot crisp is a healthier spin on traditional fruit crisps and takes advantage of the seasonal bounty of apricots. It's a recipe that originated from the Mediterranean, where apricots and yogurt are staple ingredients, and has since been cherished by families worldwide.
Ingredients
- Unsalted butter
- 1/2 cup, melted
- Ground cinnamon
- 1/2 teaspoon
- Brown sugar
- 1/2 cup
- All-purpose flour
- 1/2 cup
- Rolled oats
- 1 cup
- Lemon juice
- 1 tablespoon
- Honey
- 2 tablespoons
- Greek yogurt
- 1 cup
- Apricots
- 2 cups, pitted and sliced
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the sliced apricots, Greek yogurt, honey, and lemon juice. Stir until the apricots are evenly coated.
- Transfer the apricot-yogurt mixture into a 9-inch baking dish, spreading it out evenly.
- In another bowl, combine the rolled oats, all-purpose flour, brown sugar, and ground cinnamon. Pour in the melted butter and stir until the mixture becomes crumbly.
- Evenly sprinkle the oat mixture over the apricot-yogurt mixture in the baking dish.
- Bake in the preheated oven for 25 minutes, or until the oat topping turns a golden brown and the apricots become tender.
- Allow the crisp to cool for a few minutes before serving. For added decadence, serve with a dollop of extra Greek yogurt or a drizzle of honey.
Tips
- Make sure to use ripe apricots for the best flavor. If apricots aren't in season, you can substitute with peaches or nectarines.
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend and ensure your oats are certified gluten-free.
