Brown sugar
1/2 cup
All-purpose flour
1/2 cup
Rolled oats
1 cup
Lemon juice
1 tablespoon
Honey
2 tablespoons
Greek yogurt
1 cup
Apricots
2 cups, pitted and sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the sliced apricots, Greek yogurt, honey, and lemon juice. Stir until the apricots are evenly coated.
  3. Transfer the apricot-yogurt mixture into a 9-inch baking dish, spreading it out evenly.
  4. In another bowl, combine the rolled oats, all-purpose flour, brown sugar, and ground cinnamon. Pour in the melted butter and stir until the mixture becomes crumbly.
  5. Evenly sprinkle the oat mixture over the apricot-yogurt mixture in the baking dish.
  6. Bake in the preheated oven for 25 minutes, or until the oat topping turns a golden brown and the apricots become tender.
