  • Apricots (3 cups, pitted and sliced)
  • Granulated sugar (1/4 cup)
  • Cornstarch (2 tablespoons)
  • Ground cinnamon (1 teaspoon)
  • Flour tortillas (4 large)
  • Unsalted butter (1/4 cup, melted)
  • Brown sugar (1/4 cup)
  • Rolled oats (1 cup)
  • Chopped nuts (1/2 cup (optional))
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, and ground cinnamon. Toss gently to coat the apricots evenly.
  3. Take each flour tortilla and spoon a generous amount of the apricot mixture onto the center. Fold the sides inward and then roll it up tightly into a burrito shape.
  4. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped nuts (if using). Mix until the ingredients form a crumbly texture.
