Apricots
3 cups, pitted and sliced
Granulated sugar
1/4 cup
Cornstarch
2 tablespoons
Ground cinnamon
1 teaspoon
Flour tortillas
4 large
Unsalted butter
1/4 cup, melted
Brown sugar
1/4 cup
Rolled oats
1 cup
Chopped nuts
1/2 cup (optional)
Vanilla ice cream
for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apricots, granulated sugar, cornstarch, and ground cinnamon. Toss gently to coat the apricots evenly.
  3. Take each flour tortilla and spoon a generous amount of the apricot mixture onto the center. Fold the sides inward and then roll it up tightly into a burrito shape.
  4. In a separate bowl, combine the melted butter, brown sugar, rolled oats, and chopped nuts (if using). Mix until the ingredients form a crumbly texture.
  5. Place the filled tortillas seam-side down on a baking sheet lined with parchment paper. Evenly sprinkle the crumble mixture over the top of each burrito.
  6. Bake in the preheated oven for 20-25 minutes or until the tortillas are golden brown and crispy, and the apricot filling is bubbly.
  7. Once baked, remove from the oven and allow to cool for a few minutes before serving.
