Ingredients

Olive oil
2 tablespoons
Chicken breast
1 pound, sliced
Red onion
1, thinly sliced
Bell peppers
2 (any color), thinly sliced
Apricots
4, pitted and sliced
Fajita seasoning
2 tablespoons
Flour tortillas
4 (8-inch size)
Crumble topping
1 cup (store-bought or homemade)
Fresh cilantro
1/4 cup, chopped
Sour cream
1/2 cup

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat until shimmering.
  3. Add the sliced chicken breast to the skillet and cook for about 5 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced bell peppers and red onion. Sauté for about 5 minutes until they are softened and fragrant.
  5. Stir in the sliced apricots and sprinkle the fajita seasoning over the mixture. Cook for an additional 2 minutes until the apricots soften.
  6. On a baking sheet, lay the flour tortillas flat and evenly sprinkle the crumble topping over each tortilla.
  7. Place the baking sheet in the preheated oven and bake for about 10 minutes, or until the crumble topping is golden and crispy.
  8. To assemble, divide the chicken and apricot mixture evenly among the tortillas.
  9. Top each fajita with a dollop of sour cream and a sprinkle of fresh cilantro.
