  • Brown sugar (1/2 cup)
  • All-purpose flour (1 cup)
  • Cashews (1/2 cup, chopped)
  • Green onions (3, sliced)
  • Eggs (2, beaten)
  • Sesame oil (2 tablespoons)
  • Soy sauce (3 tablespoons)
  • Fresh ginger (1 tablespoon, grated)
  • Garlic (2 cloves, minced)
  • Onion (1 medium, chopped)
  • Dried apricots (1 cup, diced)
  • Cooked rice (4 cups)
  • Vegetable oil (1 tablespoon (for frying))

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté for 3-4 minutes until fragrant and the onion is translucent.
  3. Stir in the diced apricots and cook for an additional 2 minutes to soften them slightly.
  4. Push the sautéed ingredients to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them into the rice.
