Golden Apricot Almond Crumble with Quinoa

Ingredients
- Almonds
- 1/2 cup, chopped
- Coconut oil
- 1/4 cup, melted
- Almond flour
- 1 cup
- Cinnamon
- 1/2 teaspoon
- Maple syrup
- 1/4 cup
- Dried apricots
- 1/2 cup, chopped
- Water
- 2 cups
- Quinoa
- 1 cup, uncooked
Instructions
- Begin by rinsing the quinoa under cold water until the water runs clear.
- In a medium-sized saucepan, bring the 2 cups of water to a boil. Stir in the quinoa, then reduce the heat to low. Cover the saucepan and let it simmer for about 15 minutes, or until the quinoa is tender and all the water is absorbed.
- While the quinoa is cooking, combine the chopped dried apricots, maple syrup, and cinnamon in a separate bowl. Mix well until the apricots are evenly coated.
- In another bowl, prepare the crumble topping. Combine the almond flour, melted coconut oil, and chopped almonds. Mix well until it resembles coarse crumbs.
- Preheat your oven to 350°F (175°C).
- Once the quinoa is cooked, assemble your dish. In individual ramekins or a larger baking dish, create a layer of cooked quinoa. Spoon the apricot mixture over the quinoa, then sprinkle the crumble topping evenly over the apricots.
- Bake in the preheated oven for 10 minutes, or until the crumble topping is golden brown and crispy.
