Servings: 8

Ingredients

Cinnamon
1 teaspoon
Brown sugar
1/4 cup
Apricots
1 cup, chopped
Heavy cream
3/4 cup
Unsalted butter
1/2 cup, cold and cubed
Salt
1/2 teaspoon
Baking powder
1 tablespoon
Granulated sugar
1/4 cup
All-purpose flour
2 cups

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix until well blended.
  3. Add the cold, cubed unsalted butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour, until the mixture resembles coarse crumbs.
  4. Pour in the heavy cream, stirring gently until the dough starts to come together.
  5. Gently fold in the chopped apricots, ensuring they are evenly distributed throughout the dough.
  6. Lightly flour a clean surface and turn out the dough onto it. Knead the dough a few times to bring it together.
  7. Shape the dough into a 1-inch thick circle.
  8. In a separate bowl, combine the brown sugar and cinnamon to create the crumble topping.
  9. Evenly sprinkle the crumble topping over the top of the scone dough.
  10. Using a sharp knife, cut the dough into 8 wedges.
  11. Carefully transfer the scones to the prepared baking sheet, ensuring they are evenly spaced.
  12. Bake the scones for 20-25 minutes, or until they turn a beautiful golden brown.
  13. Allow the scones to cool slightly on the baking sheet before serving. Enjoy these delightful scones with a cup of tea or coffee.
