4 cups, pitted and sliced
Granulated sugar
1/2 cup
Lemon juice
2 tablespoons
Cornstarch
2 tablespoons
Ground cinnamon
1 teaspoon
All-purpose flour
1 cup
Brown sugar
1/2 cup, packed
Old-fashioned oats
1 cup
Unsalted butter
1/2 cup, melted
Salt
1/4 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced apricots, granulated sugar, lemon juice, cornstarch, ground cinnamon, and salt. Mix gently to coat the apricots evenly.
  3. Transfer the apricot mixture to a greased baking dish, spreading it out evenly.
  4. In a separate bowl, combine the all-purpose flour, brown sugar, oats, and melted butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  5. Sprinkle the crumble mixture evenly over the apricot filling in the baking dish.
  6. Bake for 30-35 minutes, or until the topping is golden brown and the apricots are bubbling around the edges.
  7. Remove from the oven and allow to cool for a few minutes before serving.
  8. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
